  • Chia seeds, optional
  • 1 medium avocado
  • Fresh dates, pitted
  • Raw cacao powder
  • Toppings: cacao nibs, shredded coconut, hemp seeds, bee pollen, etc.

  1. If using chia seeds, place about a 2:1 ratio of water to seeds in a bowl to gelatinize (this will take about 5 minutes). If not, move on to next step.
  2. In a high-speed blender or food processor add avocado, dates, raw cacao powder, and chia seeds if using. For 3 servings, start with 4-5 dates and about 1/4 cup cacao powder. If using chia, begin with 1-2 tablespoons of the soaked seeds.
  3. Blend on high until very creamy and without any chunks, streaming in water as needed.

  4. Taste. If the pudding is not chocolatey enough, mix in additional cacao powder about 1 tablespoon at a time. If not sweet enough, add more dates, blending in 1 or 2 at a time. If needing to blend more, use water only as needed.

  5. Taste again to make sure the flavor is perfect. Scoop into serving bowls and chill if desired, or top with your toppings and enjoy as is.

Recipe Notes

  • If using dried dates, soak in water for about 10 minutes or until soft. Then strain and pat dry.
  • Other options to sweeten the pudding instead of dates: about 1 frozen banana, about 1-2 tablespoons of liquid sweetener such as coconut nectar, high-quality maple syrup, or raw honey, or a few drops of high-quality stevia.
